soups: I did it again
It is that time of year. Yep. It dropped below 90, and I want to eat soup everyday. I made tortellini soup on Monday, and it was delish. Of course, as soon as my children heard what was for dinner, they renamed it turtle-weenie soup.

You will need:
olive oil
1 medium yellow onion diced
1 tablespoon of minced garlic
1 lb of ground turkey (browned)
1 can of petite diced tomatoes (do not drain)
1 can of cannellini beans (drained and rinsed)
1 container low sodium chicken broth
salt
pepper
1/2 tsp. dried basil
red pepper flakes
1 package of refrigerated cheese tortellini
fresh basil
parmesan cheese
Saute the onion in some olive oil. When the onion is translucent, add the garlic. Do not burn the garlic. It will taste like turtle weenies if you do. Add the tomatoes, broth, browned turkey, beans, salt, pepper and a pinch of red pepper flakes. Bring it to a boil, and then let it simmer for as long as you’d like, just stir it occasionally. Before you are ready to serve the soup, bring it back to a boil, and stir in the tortellini. Cook according to package directions (seven or so minutes). Remove from heat and add some chopped basil and grated parmesan.
It is so good. But, don’t take my word for it. A picture is worth 1000…

Looks yummy! I am a total soup fiend and as soon as September rolls around, I am ready for soup every day. I’ll have to give your “turtle-weenie” soup a try!
