Inez ain’t got nothing on me…
Sweet friend Staci recently had a baby, so I am taking some food by tomorrow night. It is really a selfish gesture as I’m doing it to get some quality time with doll baby Henson. I have the hardest time deciding what to cook for other people. I try to pick something I know they like. I know Staci likes the peanut butter pie at CS’s in Jackson. Heck yeah… who doesn’t? It will make you wanna slap Inez (she makes the pie, keep up). But you won’t, because girl, she will cut you.
Here is my version… makes two pies. You know, so you will actually give one away.
2 (8 ounce) packages of cream cheese, at room temperature
3 cups of heavy cream
1 1/2 cups of confectioners sugar
1 cup peanut butter (Peter Pan, duh)
1/3 cup of milk
2 ready made graham cracker crusts
Whip the heavy cream with an electric mixer (on high speed) until it thickens. Set aside. In a large bowl, beat the cream cheese and sugar until smooth. Stir in the peanut butter and mix until smooth. Next add the milk and beat until creamy. Fold in the whipped cream and spoon the mixture into the prepared crusts. Cover and chill for at least two hours.
I wish Mrs. Donna got one for her Birthday…oh well.
